run restaurant poised to reopen
Changes have been implemented to improve the experience for Under Armour Curry 3 White customers, including the addition of an action station where a student chef will cook, serve and prepare an item in the dining room. Communal tables of six will be offered, as well as to go items, and the menu will be "smaller, but better and faster service, as last semester we ran into some minor operational issues," Kaltenecker said.
More than 350 residents dined at the restaurant last year, with an average bill per customer of around $15, according to school officials. Revenue is used for food costs and the culinary program. The restaurant does not serve alcohol.
Other highlights include specialty non alcoholic and espresso coffee drinks as well as custom made MCC coffee. A new checkout system has been purchased with Perkins Grant funding, along with a cooling unit for to go items.
The 48 seat restaurant serves as the capstone class for the college's culinary management program. Students create the menu for the restaurant, which changes three times throughout the semester. They also handle the dinner service, which entails students working the floor and in the kitchen preparing the food.
"This is a major part of cross training, and a great overall evaluation process for me when employers call me for specific hospitality positions," Kaltenecker said. "I make recommendations based on employability traits, but also on how well a student performed during their time with us on various stations."
Each student rotates through all the positions during the semester.
The college launched its first culinary management program in August 2009. Along with the certificate program, MCC now offers an associate's degree in culinary management.
The employee dining room at McHenry County College again will be transformed into a student run restaurant for residents craving a taste of the community college's culinary creations.
