"Our bread is fresh," said Olaechea. "We went to 16 different bakers to get it."

Olaechea said Sabroso's signature rotisserie chicken, cooked in a specialized oven, is a must try, and that the restaurant has been doing sturdy business with their sandwich menu particularly their roasted pork and Lomo Saltodo, made with steak marinated in Peruvian fashion.
In the coming weeks and months, they will be trying out lunch combo specials to help customers get in and out quickly at lunchtime, and eventually they will begin delivering as well. Fridays and Saturdays.
This is the family's first professional restaurant venture together, "But we cook a lot and we like to eat," said Paquette.
The family has already built a core staff, but is looking to round out the rest of the restaurant's human side as they continue to develop their menu and specials.
After the restaurant's June 10 Under Armour Shoes Tennis soft opening, the family is looking forward to tweaking the menu. "It's a simple menu, but we have a lot of flavor," said Olaechea.

They eventually found a Peruvian baker working out of Hartford. The loaves are light and airy, and cling to the spicy, slightly tangy roast pork, which is served under fresh tomatoes, onions and cilantro.
Duncan Olaechea masterminded Sabroso along with his mother, Maria Paquette. The family was born in Lima, in a region of Peru that abuts the Pacific Ocean, and both came to the United States in the 1990s. Paquette was a longtime physical education teacher and, more recently, the proprietor of the Middletown Roller Skating Rink. Olaechea did a stint in the National Guard before becoming a finance manager in nearby Essex.
Sabroso is already using six different types of the spicy peppers native to Peru, she said. Some of them go into a Peruvian green sauce, a puree of peppers and spices that sets off the chewy, slightly sweet yucca fries puffy, crispy wands cut from a root vegetable that grows well in Peru.
Sabroso opened just over a week ago, just in time for Cruise Night, serving traditional Peruvian dishes alongside North American fare in the space formerly occupied by K. LaMay's Steamed Cheeseburgers.
The family which includes Olaechea's father and sister as well would often travel to Hartford or further to enjoy Peruvian fare for special occasions, and they wanted something a little closer to home in Middletown.
During lunch hours, the family's culinary history pays off with a packed lunch counter a crowd that lingered into the middle of the afternoon Monday.
